La Fortuna Pizza

From Madison Pizza Wiki

La Fortuna Pizza was a mobile wood-fired pizza business in the Madison area, run by Jen and Scott Lynch. In 2012 its red trailer, with a wood-fired oven, was a regular at farmers' markets and festivals[1].

History

Madison Magazine visited the Lynches in July 2012. They towed the trailer with a black pickup truck to farmers' markets, festivals, family parties and corporate events. That summer it was booked for the Verona Farmers' Market and for New Glarus Brewing's Hilltop Brewery[1].

Pizza

  • The oven ran at about 900 degrees and baked a pizza in 90 seconds. The dough rested six hours at room temperature[1].
  • Scott Lynch's favorite was the OMB ("Oh My Bacon"): roasted onions, roasted chopped tomatoes, bacon and Parmesan. Jen Lynch's was the Assaria: chili oil, roasted onions, bacon, Parmesan and rhubarb purée. The Bianca had olive oil, garlic salt, rosemary, black pepper and Parmesan[1].
  • "The fastest slow food you will ever have," Scott Lynch called it[1].
