Dough Boy’s Pizza

Dough Boy's Pizza is a takeout and delivery pizzeria at 1207 N. Sherman Ave., in the Northgate Shopping Center. It opened on October 2, 2023, in the former Falbo Bros Pizzeria store. The owners are Matt Draeger and his son, Matt Draeger Jr.; the business "started in our home kitchen", and the sauce is an uncle's recipe[1].
Pizza
- Deep dish (16 inches, with eight cheeses, about 45 minutes to bake), thick crust, thin crust, French bread pizza, and a super-thin 12-inch gluten-free crust[1].
- The cheese at the edges is deliberately caramelized, an idea picked up in Detroit. Slices are sold from a warming case[1].
Trivia
- It is not related to the former Doughboys Pizza in Waunakee, which spelled its name differently[1].
