Thin-crust pizza is made by several of Madison's older pizza places. It is often cut into squares rather than wedges.

In Madison

  • Buck’s Pizza (1960) has a "thin, flaky crust covered with thick tomato sauce", and the pizza is "cut into bite-sized squares"[1].
  • The Pizza Oven (1964) made "good pizza with a thin, crisp crust"[2].
  • Pizza Pit (1969): in 2014 a writer described another shop's regular crust as "about Pizza Pit-thin"[3].
  • Supreme Pizza (1981): "It's that cracker-crisp crust, a spicier sauce, cut in the squares", said Tom Cranley of the Roman Candle, who bought his pizza there. "Madisonians aren't big fans of that style of pizza, not in large numbers, let's say"[4].
  • Pizza Extreme (1991) had hand-tossed thin crust, which a reviewer found "a slightly doughier crust" than Pizza Pit's, and at first no thick crust at all[5].
  • Pavlov's Pizza (1991) cut its thin crust pizza "into squares instead of triangular slices"[6]. A reviewer in 1991 wrote that the crust "was like bread that had been browned before the toppings had been put on"[7].

Not quite thin

  • Gumby's crust was hand-tossed and "a lot thicker than other people's regular crust"[8].
  • Glass Nickel Pizza's crust was described in 2002 as "middling thick, not a meager wafer nor a doughy sponge"[9].
