Pizzeria Uno (later Uno Chicago Grill) is a national restaurant chain from Chicago, known for deep dish pizza. It had restaurants in Madison from 1985 to 2022.

History

The first Madison restaurant was announced in August 1984 as "coming to Madison in November at 222 W. Gorham St."[1] After a long-delayed grand opening it opened on Monday, March 11, 1985. Holly Gruber of the Capital Times went that first day and was not impressed ("Pizzeria Uno's fabled delight was skimpy, had scorched crusts"): the crust she was promised would be one and a half to two inches deep measured an inch. The manager, Todd Stern, explained that the original Uno had opened in Chicago in 1943 and the second only in 1978, in Boston[2]. Genie Campbell of the State Journal reviewed it that spring[3], and in June Jacob Stockinger of the Capital Times contrasted its "$10,000 worth of brass" and dark green tile with the cheap booths of the new Noble Roman’s on State Street; a large deep-dish Uno Special was $12.95, and an express lunch of soup or salad with an individual pizza $2.95[4]. By 1986 the restaurant was licensed to Pizzeria Uno of Madison, Inc., with Joseph Krupp as agent[5], and its advertisements said "Uno means number one for deep dish pizza & fun ... Voted Madison's Best 1986"[6]. "Even in this pizza capital, Uno's stands out," Stockinger wrote that August[7], and a year later Kaye Schultz and Karen Prager told incoming students: "A pizza war rages in Madison ... But even Pizza Pit, Pizza Hut and Rocky fans enjoy this brasserie with its Chicago-style pizza that's as filling as a meal"[8]. In 1989 it sold $5 box suppers at Concerts on the Square: an individual spinach-broccoli pizza, salad and cheesecake[9]. A second opened on Monday, July 15, 1991, on the far west side, at 7601 Mineral Point Rd., in "the 125-year-old Ganzer farmhouse" that had been the restaurant Chez Michel since 1981; the building was expanded and renovated with ceramic tile floors, a mahogany bar and booths[10][11]. The license had been applied for in March 1991 under Uno's Concepts of Madison, Inc., with Thomas G. Beach as agent[12][13]. Two reviews followed. John Kovalic of the State Journal found the old house "far more conducive to dining than the cavernous State Street location" and noted that "even Chicago, home of the original Uno, has but two such restaurants"; the Numero Uno was $9.95 and the Spinoccoli $9.25, and carry-out pizzas came fully baked, unbaked or frozen[14]. Jay Rath of the Capital Times liked the Spinoccoli best of Uno's pizzas, found the center of a small "Chicago's Famous" soggy, and reported that the general manager, Lisa Reisdorf, had put the staff through a week with Uno's trainers from Boston rather than transfer the "too student-oriented" downtown crew[15]. In 1993 "Pizzeria Uno owners Martha and Tom Beach" gave $5 "UNO-Teers" certificates to volunteers in 16 Madison elementary schools[16], and Beach joined the board of Downtown Madison Inc.[17] Two masked men robbed the west side restaurant at gunpoint at 12:30 a.m. on May 21, 1992, while it was still open[18]. Both were listed in a 1994 dining guide[19]. In 1995 both held licenses under Thomas G. Beach[20]; Beach spoke up in that September's Downtown parking debate[21], the west side restaurant joined the new Takeout Taxi delivery service in October[22], and at Christmas Uno sold gift certificates at 20 percent off with a "Two Can Dine for $12.99" coupon of wings, salads and a deep dish[23]. A 1996 profile of Urban Land Interests counted "the Pizzeria Uno complex in 1984-85" among the developer's downtown projects[24]; both restaurants were relicensed under Beach in May 1996[25][26], sold box suppers at that summer's Concerts on the Square[27], and offered delivery drivers "$12/hr & more" in June[28].

In 1990 the downtown restaurant, licensed to Pizzeria Uno of Madison Inc. with the developer Joseph Krupp as agent[29], advertised itself as "Voted Madison's Best Pizza Restaurant" with a "Camp Uno" summer promotion[30], and sold $5 personal deep-dish box suppers at Concerts on the Square, where a State Journal reviewer found the pizza "doughy and unexciting"[31][32]. That July the franchise, Pizzeria Uno Restaurants of Wisconsin, was recruiting managers for an expansion in Madison and Milwaukee[33]; its office was at 2 E. Mifflin St.[34] On December 14, 1990, the paper reported that the "upper crust" Chez Michel on Mineral Point Road, ten years old, would close at the end of the month and be converted to a Pizzeria Uno in the spring. Tom Beach, president of the franchise, expected about 60 full- and part-time workers, some of them from the 20 or so losing their jobs at Chez Michel, and was enlarging the kitchen for quick lunch service; a third Uno was planned for Milwaukee[35][36].

In September 1996 the west side restaurant was hiring drivers and servers at "$10 and up per hour"[37], and that October the Madison advertisements carried the chain's next logo, "UNO Chicago Bar & Grill, est. 1943", over a menu of pastas at $8.99 and a grilled meatloaf "favorite" at $7.89 beside the pizza[38]. Tom Beach was re-elected to the board of Downtown Madison, Inc. that month as "Tom Beach, Pizzeria Uno"[39].

Both restaurants were hiring through 1997: delivery drivers "w/car (earn $10/hr & up)", wait staff, cooks and hosts in January, cooks and servers in the summer, and day hosts and drivers for "Uno West" in September[40][41]. In February the Federal Trade Commission made the chain drop the "low fat" claim for its Thinzetta thin-crust pizzas, all six of which carried more fat than the limit, up to 36 grams a serving[42]. A State Journal profile of Urban Land Interests that March listed the Gorham Street building among the developer's downtown projects: "222 West Gorham (Pizzeria Uno, Britches Great Outdoors), 1984 to 1985, $1.2 million"[43]. Uno West took part in Food Share Day on May 6, 1997, and Tom Beach and his wife Martha were quoted in the Capital Times' preview — "Our customers appreciate that we are committed to the community" — under the name Bach; the State Journal, naming him to the county's new workforce-development committee that month and quoting him on welfare reform in July, printed "Breech" and "Beech", the latter as "owner of Pizzeria Uno, 105 S. Butler St.", the company's office[44][45][46][47]. The city's 1997 license list carried the two restaurants under Pizzeria Uno of Madison and Uno's Concepts, both with Thomas G. Beach as agent[48][49]. Uno again sold box suppers at Concerts on the Square that summer — deep dish $5, deluxe deep dish and gourmet thin crust $6, a kid's pepperoni $3[50] — and had a stand at Taste of Madison[51]. The 1997 Readers' Choice Awards of the two dailies ranked Pizzeria Uno second for pizza, behind Pizza Hut and ahead of Pizza Extreme, Rocky Rococo's and Paisan's[52]. In December the downtown restaurant hosted the Madison Maennerchor and the Temple Beth El Youth Choir on their holiday rounds of State Street[53].

In January 1998, as the Kohl Center opened, Beach — now a vice president of the Greater State Street Business Association — told the Capital Times that UW games had long drawn crowds away from State Street and that the arena would deliver thousands to the strip's back door: "Where there's people, there's hope"[54][55]. The year's advertising added three pizzas in April, among them Grilled Vegetable and Bayou Chicken, and four entrées in July (Bacon Cheddar Chicken, Chicken & Sausage Penne and two sirloin-tip plates), with "Bring a Friend to Lunch" and "Two Can Dine" coupons and free delivery in a limited area[56][57][58][59]. Uno West joined Food Share Day on May 5[60], both restaurants were relicensed under Beach in May[61], Uno sold box suppers at Concerts on the Square from a stand on Pinckney Street[62] and had booth 54 at Taste of Madison[63], and in October both stores were hiring — the west side "between West Towne & Point Cinemas", day hosts to $8 an hour and cooks to $10[64][65][66]. The October 1998 restaurant guide listed both, open daily 11 a.m. to midnight, beside an ad announcing "Voted Madison's Best Restaurant For Pizza!" (Central, 255-7722; West, 833-7200)[67][68]. That Christmas the business association's gift-wrapping stand stood "next to Pizzeria Uno at State and Gorham"[69].

In 1999 the two restaurants were licensed to Pizzeria Uno of Madison Inc. (Gorham Street) and Uno's Concepts of Madison Inc. (Mineral Point Road), both with Thomas G. Beach as agent[70]. Beach, "owner of both Madison Pizzeria Uno restaurants and a third Wisconsin outlet in Milwaukee" (Elm Grove), was vice president of the Greater State Street Business Association that year and backed the parking ramp planned for the Cue-Nique site on West Gorham Street[71][72][73]. Michael Muckian gave the west side restaurant, in "the old brick farmhouse on Mineral Point Road", three stars in May 1999: six thin-crust pizzas and twice as many deep dish in three sizes, from $5.49 for a small cheese to $19.69 for a large Chicago Classic or jambalaya pizza, alongside fajitas, crab cakes and sirloin tips. The Artipeggio thin crust (eggplant, artichoke hearts, red peppers) outdid the jambalaya deep dish[74]. The restaurant opened an outdoor patio that summer[75], and both were in the October 1999 restaurant guide, open daily from 11 a.m. to midnight[76].

The license lists of 2000 and 2001 carried the downtown and west side restaurants under Pizzeria Uno of Madison, Inc. and Uno's Concepts of Madison, Inc., both with Thomas G. Beach as agent[77][78]. Taggers acid-etched the Gorham Street window in December 2000, "owner Tom Beach" told a reporter[79], and the mid-State Street parking ramp was planned in 2001 for the lot next door[80]. The third restaurant, Pizzeria Uno Chicago Bar & Grill at 3010 Crossroads Dr. on the far east side, applied for its license in May 2002 under Pizza Ventures III LLC and was "now open" on May 27, 2002 — "How long does it take to get from Chicago to Madison's Eastside? Just over 59 years"[81][82]. Sandra Kallio reviewed it for the State Journal in January 2004: tucked behind the car dealerships near Highway 151 and the Eastgate cinemas, with a Hot Tub Martini, firefighter memorabilia on the walls and an individual deep dish for $3.29[83]. That year the Gorham Street building belonged to Urban Land Interests and was considered for the garage project[84]. The city's license lists carried all three from 2002 to 2007[81][85][86]. In 2007 the West Side restaurant, with a daily deep-dish and thin-crust special at $8 or $9 a person, was a lawyer's business-lunch "hot spot"[87]. In 2010 the two remaining restaurants, East at 3010 Crossroads Dr. and West at 7601 Mineral Point Rd., advertised their patios together as Uno Chicago Grill[88]; the deep dish Numero Uno was the most popular item on the menu in 2011[89].

The west side restaurant closed on May 16, 2016. Its owner, Tom Beach, had then been with the brand 26 years: he bought the downtown Uno (opened 1985) in 1987 and ran it until it closed around 2010[90]. The developer Joseph Krupp was his partner in those years: a 1992 profile said Krupp "took over the ownership of Pizzeria Uno on Gorham Street several years ago and maintains an interest in the West" side restaurant[91]. He said the land was worth more redeveloped. Apartments called Uno Terrace were built there, and the farmhouse was kept as a community room[11]. In March 2022 the east side restaurant was "the only Uno's still in business locally"[92]. It was still on the city's license list that May[93], and had closed by July[94].

Pizza

  • By January 1994 the Madison advertisements carried the chain's new logo, "The Original Uno Chicago Pizzeria, Est. 1943", with a Rose Bowl deal of two delivered deep-dish pizzas for $14.95[95]. The thin crust was sold that summer as the "Pizzetta": the Harvest Pizzetta, a California-style vegetable pizza, was one of Uno's $5 box suppers at Concerts on the Square[96].
  • Isthmus readers voted Uno Madison's best restaurant for pizza every year from 1988 to 1992, as a 1993 advertisement boasted[97]; a 1998 ad still said "Voted Madison's Best Restaurant For Pizza!"[67].
  • Three pizzas added in 1998 included the Grilled Vegetable and the Bayou Chicken[57].
  • The Numero Uno and the Chicago Classic deep dish — "the pizza that made us famous" in a 1999 advertisement — were the signature pies; in 1999 the deep-dish list also had Spinoccoli, Sea Delico (shrimp and seafood), chicken and portabello with roasted garlic, and a jambalaya pizza with shrimp, Andouille sausage and chicken. Thin crusts included the Superoni and the Artipeggio[74][98]. The Numero Uno was still the most popular item in 2011[89].
  • The Spinoccoli, an individual deep dish with spinach, broccoli, cheese, garlic and tomato, was Uno's $5 box supper at Concerts on the Square in 1994 and its $2 slice at Taste of Madison in 1995[96][99].
  • Uno "credits itself with inventing the Chicago-style deep-dish pizza in 1943"[74].
  • In 1992 the downtown restaurant added nine pasta dishes, which two three-star reviews that May found ordinary beside the Numero Uno[100][101], and in June it launched "Plizzettas", a dozen gourmet thin-crust pizzas from plain cheese ($4.95) to Cordon Bleu ($7.95). Jay Rath gave them one star: "Uno's, supposedly the first restaurant to serve deep-dish pizza, is probably the last pizzeria to come out with a thin-crust version. It's not very good"[102][103]. That autumn's Uno Platter was garlic bread, a small salad and an individual deep dish for $6.95[104].

Former Locations

  • 222 W. Gorham St. (March 11, 1985[2]; licensed through 2004[105]). The building was a 1984–85 Urban Land Interests project costing $1.2 million[43], and still belonged to the developer in April 2004[84]. The building was Quaker Steak & Lube by May 2012[106].
  • 7601 Mineral Point Rd. (July 15, 1991[10] to May 16, 2016[90]). Before Uno the farmhouse was Chez Michel, with the Cajun Cafe on its second floor, until the end of 1990[36].
  • 3010 Crossroads Dr. (May 2002[82] to about June 2022). La Taguara was to open in the space[94].
