Pavlov’s Pizza was a Madison pizzeria that operated from 1991 to 2009, first downtown at 119 W. Mifflin St., a block off the Capitol Square, and from 1999 at 1511 Williamson St. Until 1993 or 1994 it was called Pagliai's Pizza.
History
David Miller opened Pagliai's Pizza in late April 1991. Three weeks later it was already advertising itself as "No. 1 in the heart of Madison!" It offered dining in, carry-out and delivery downtown, and stayed open until 2 a.m.[1]
The name Pagliai's was still in use in April 1993[2]. By July 1994 Miller held his license as Pavlov's Pizza, at the same address[3] and with the same telephone number. "Pavlov's opened in 1991 as Pagliai's, and while the name has changed, the pizza remains great", a columnist wrote that September[4]. Why the name was changed has not been found.
Miller renewed the Class B beer license for Pavlov's Pizza at 119 W. Mifflin St. in May 1998[5]. That year the building's owner, Don Hovde, cleared his tenants from the block for a high-rise he planned at West Mifflin and Fairchild streets. By October Pavlov's was the only one still operating, on a month-to-month lease[6]. It planned to move to 2322 Atwood Ave.[7] Instead Miller bought a taxidermy shop at 1511 Williamson St. for $65,000[8].
The downtown shop closed on March 28, 1999[9]. The move was expected to take a month and took six: Pavlov's reopened on Williamson Street in the last days of September 1999, for pick-up and delivery only[10]. It was run by Miller and Jennifer Sandor[10].
Pavlov's was still in a dining guide in May 2009[11]. By June 17 it was closed, "according to a recorded phone message at the restaurant"[12].
Pizza
- Beer Nuggets were the house specialty: squares of pizza dough, deep fried and served with warm pizza sauce. They were not made with beer[1]. Miller sometimes made them heart-shaped[7].
- The thin crust pizza was cut into squares[7]. In 1991 a 14-inch thin crust with two toppings cost $6.40[1].
- Pavlov's Dog House, one of five specialty pizzas in 1998, had sausage, pepperoni, mushroom, onion, green pepper, Canadian bacon, and black and green olives[7].
- "Opened in 1991 as Pagliai's, and while the name has changed, the pizza remains great. Lots of cheese, thick sauce, fresh toppings and crust that's like browned bread," Jay Rath wrote in 1994; the shop served lunch on weekdays and stayed open until "after bar time"[4].
- "The Pizza Specialist" of the 1995 Yellow Pages offered over 20 toppings, "The Two Pizza Deal" (any two pizzas, any size, one low price), dinner until after bar time and, "now serving beer & salad"[13].
- The Sicilian had "double everything": crust, sauce, cheese and sausage[7].
- There was also a thick-crust pan pizza[1] and a "Stuffed Chicago Style pizza"[7].
Trivia
- In March 2000 Madison Gas and Electric ran a full-page advertisement with Dave Miller at his oven: Pavlov's had bought new heating, ventilating and air-conditioning equipment through MGE's Shared Savings loan, repaid partly from the energy saved[14].
- The logo used hearts for the apostrophe in "Pavlov's" and for the dot of the "i" in "Pizza"[7].
- As Pagliai's it sold no beer[1]. Miller applied for a beer license in 1994[3] and held one in 1995[15], when the student guide praised the "great crust and 'beer nugget' appetizers"[16].
- The dining room in 1991 was green throughout, with floor-to-ceiling windows and a jukebox of 1970s hits[1].
- Pavlov's was a member of Madison Originals, the association of independent restaurants, in 2003[17].
- A cheesecake maker started her business in 2001 in kitchen space shared with Pavlov's[18], and Grace Cheesecakes was renting space there in 2007[19].
- Madison Gas and Electric featured Pavlov's in an advertisement about energy savings in 2000[14].
